I'm not much of a piano player yet (I'm an intense string bassist )
and I was just wondering, what are the names of the three foot pedals on a grand piano?

The sostenuto or middle pedal is often used to sustain lower notes that need to be held held when you physically can't do so....It helps to avoid a "muddy" sound when you have notes that need held like that....

The pedal on the far right is the damper pedal (aka "the pedal"), the pedal on the far left is the una corda (soft pedal) and the middle pedal is the sostenuto pedal. I don't have much experience with the sostenuto pedal and I usually practice with an upright piano that has a "practice" pedal in the middle instead of the sostenuto. Hope this helps!
